Cooking Acorn Squash | Roasted Acorn Squash With Butter and Apricot Jam

Cooking Acorn Squash is easy and one of our favorite acorn squash recipes is roasted acorn squash with butter and apricot jam. Acorn squash is easy to prepare many different ways and this roasted acorn squash recipe makes a delicious side dish and cooks in about 45 minutes.

Cooking Acorn Squash Ingredients

2 acorn squash

2 tablespoons butter

4 generous tablespoons apricot preserves

cooking spray or avocado or olive oil

salt and pepper

How To Choose Acorn Squash

Acorn squash are winter squash, and you’ll want to choose squash that are heavy, dark green with a little oranginess on the bottom and without soft spots or blemishes. Acorn squash has a mildly sweet, nutty flavor, and it’s full of fiber.

How To Cook Acorn Squash

You can cut the stem end off, and use that to create a flat surface. Because we’re going to be filling these with butter and jam towards the end of the roasting time, I like to leave that part on so the filling doesn’t stream out. If you're having trouble making the first cuts, try microwaving it at 30 second increments until you are able to pierce the skin.

Begin preheating your oven to 450*. To cut an acorn squash, use a hefty knife and cut down one of the grooves, angling your knife around the end point, and down the other side, and I’m sliding my knife into the cut, and applying gently pressure back and forth which will help split the stem end, where an acorn squash tends to be harder to cut. Once the your squash is open, use a spoon or scraper to remove the seeds and pulp. You can save these seeds and roast them like pumpkin seeds… I’ll be posting some recipes for sweet and savory pumpkin and acorn seed recipes soon, and I’ll post a link in the corner and below if you want to take a look.

Roasted Acorn Squash Directions

Preheat the oven to 450 degrees. Prep a baking sheet or casserole dish with some oil on the bottom, then place the halved acorn squash cut side down. Place the baking sheet in the 450 degree oven, then pour enough water to cover the bottom of the sheet, but about a ¼ inch. This will keep the squash from burning or getting dried out.

I like to make roasted acorn squash face down, cooking it for about 30 minutes adding a bit of water to the sheet if it cooks away, Cook the squash until its tender and you can pierce the squash with fork.

Remove the squash from the oven, and carefully turn them over. Sometimes I put them back in the oven for 5 - 10 minutes to caramelize the flesh a little before adding the butter and jam. Add about a ½ tablespoon of butter to each half, and a generous tablespoon of apricot jam.

Stick the acorn squash back into the oven for about 5 - 10 minutes to melt the butter and begin melting the jam.

Remove the squash from the oven, and let cool slightly before serving. The apricot jam gives a nice, subtle tangy sweetness that mixes with the melted butter and tastes delicious with the acorn squash.
