Whole roasted cauliflower is a delicious, easy recipe (though it takes some time). It's a great way to use discolored or oxidized cauliflower that would otherwise end up in a landfill.

It's super easy – all you need is a whole cauliflower, olive oil, and salt.
Boil your cauliflower for 10 minutes until fork tender. Move it to a cooling rack so all the steam can escape, which takes 20-30 minutes. Coat it in 1 tablespoon of olive oil and place it into a preheated, very hot oven – 450-550 F. After 30-45 minutes, remove it and allow it to cool slightly before serving.
