resident and craft cocktail connoisseur

obviously why else are we here but I

anyone I don't want anyone listening to
me anyway on with the show hello welcome
to season two of mix and mingle
I'm your host Stacie Denison and tonight
we have a very special guest miss Katie
Ackley from Willard's Tap House and
Largo welcome Katie thank you for being
here thank you for having me I'm excited
good so katie is a cicerone which I just
learned this word today actually it's a
basically a simile which we learned last
season of your magic of beers
i leveled one Cicerone though there are
about three or four different levels
they each get increasingly harder but
the level one cicerone means I know how
to pour a good beer and into the proper
glassware so while that is very
important
so Katie tell us a little bit about
Willard papeles
for sure we are located in Largo Florida
and we have 40 different craft beers on
tap primarily we have craft but we also
do have international beers and we have
always ten beers that are local so Tampa
Bay area Florida in general just be
local Florida craft beers we are in the
park so many so many but yeah I mean we
just good craft beers we've got wine
we've got snacks and just great people I
mean we've been equated to cheers on
many an occasion and it's just a fun
place to go and grab the beer for sure
thanks so um tonight we're gonna be
making beer tales which I'm very excited
about because craft beer is one of my
favorite things you're in the right
profession than my face so as you can
see I came prepared with my I do craft
shirt I like it like and so what is the
first beer tale that we're gonna be
baking first tell us what if your tale
is for those that don't know okay so
there are a whole variety of different
types of beer tales you know you've got
your loaded beers which actually have
liquor in them you've got your just
mixed beers you got layered beers which
is actually the first one that we're
going to make and you have beers that
have like mixers in them or emulate
certain things like desserts or
different cocktails so what we're gonna
do first is the layered beer and what
most people are familiar with in terms
of layered beers are like your black
velvet so you are black and tans your
snakebites what I decided I wanted to do
was a kind of spin on it where I'm going
to be using
a chocolate peanut butter stout layered
or rather mixed together since they're
not the right consistency visibly layer
but mixed with a strawberry lambic and
hopefully when we get to the end of it
it'll taste either like Neapolitan ice
cream or like a peanut butter and jelly
sandwich that sort of thing so let's
give it a go all right so I'm gonna be
using the Terrapin liquid bliss as my
chocolate peanut butter porter one of my
favorites and normally I like to use the
Timmerman strawberry lambdak when I'm
doing this particular style of layered
beer but since we didn't have that we
have the throughly strawberry lambic
which is a Belgian white brewed with
fresh strawberries so that is going to
be our layer on top easy peasy layered
beers are 100 percent the easiest sort
of beer tale you could possibly hope to
make thank you thank you probably could
put a little bit more head in there but
not on grabbing max for this all right
awesome so what is our second beer
scaled everything so this one is gonna
be a little bit more complicated and I
have a little bit of a backstory for it
okay most people might actually be
familiar with the name of this one it's
a michelada so when I was living in El
Paso Texas for the first 11 years of my
life I mean she'd rather I didn't allow
to meet you a lot all the time every day
I did learn about them though when I was
younger and in in El Paso Texas a
michelada was super simple just lime
juice salt on the rim of the glass and a
domestic beer or just a light sort of
beer we often used to Coptic which my
family still used to this day when I
moved to Tucson it was a very similar
style but they also incorporated tomato
hot sauce and worst asure which I loved
as a fan of Bloody Marys
yeah then in Florida I realized the
common enchilada didn't incorporate
tomato juice
but Clamato so today what I was going to
name at that seafood Florida Flair oh
yeah
100% what I'm gonna make today is an
accumulation of kind of little bits and
pieces of those three to achieve Ava's
that I grew up with so you came up with
these recipes all on your own
mostly yeah I mean when you have so many
different beers at your disposal like I
do with Willard's um 40 like I said um
it's difficult not to experiment you
know see how things layer together and
see you know what you can make taste a
different way when you combine those two
flavors and you know growing up with a
family who enjoyed you know kind of
experimenting with certain types of
cocktails and things as I got older
having something like the michelada as a
base foundation to work with and then
kind of throw in my own little flair
into it was another fun way for me to
experience and learn a little bit more
about how a taste profiles combined so
I'm going to start off with this
michelada with exactly what I said
before hit the cop thing so this is
going to be our base foundation and
everything else that we add to it are
gonna be to flavor so everything to
taste if you want a little bit more of
one thing a little bit more of another
it's all about what you prefer so just
like a Bloody Mary basically if you like
that spicy you know some people call it
like a bloody Caesar when you kind of
make a similar Bloody Mary style but
with a beer its base Moochie lavas just
have very specific types of ingredients
I'm gonna throw a little couple of
dashes were she sure in there I don't
even know if I can ounce that correctly
I never know an impossible word I'm
going to do our Clamato for Florida
I'm also going to add our hot sauce
normally I like to use either Cholula or
like like crystal but we have these
little mini tabasco's which I thought
were adorable and I've had to use them
so a couple of dashes
and last but not least what I wanted to
add to make it like I was saying kind of
my own little personal Flair thrown some
banana pepper juice in there and then
you can give it a little bit of a mix
use a garnish of maybe banana peppers or
some olives some pickles anything like
that that is some drink I know it isn't
what a fan of the savory 100% it would
be a good like hangover pure like a good
hair of the dog not gonna sit and I've
used it as a hangover cure once or twice
but I've definitely used it as a
hangover cure once or twice it's like a
beer Bloody Mary
all right bloody Caesar use bloody
bloody Caesar some people will call yeah
but a michelada is what we have finally
created to this village well now that we
have our drinks which is the most
important part obvious how about we step
into the lounge for some mingling I
would love that
I don't know if I want to know take care
of the diva okay I'll put these here for
now oh yes that's right I was distracted
by the M&Ms I forgot tired so um Katie
you have a very interesting bye oh I'll
say I offer all my guests I asked them

um I read Katie's and I was like this is
lunch so I tried to narrow it down
but she is a very interesting past so on

a fan so um the next thing I want to
talk about is uh this is not Katie's
first time on TV
unfortunately no what I was um very very
intrigued by this and I did a little
research and so Katie was on MTV's made
so if you don't know what made us Katie
tell them about it so originally MTV
how-to show called made that was very
much like I want to be made into a rock
star I would be made into the prom queen
but then they ended up doing a dream
bigger series which was actually helping
people get made into different
occupations so I applied to be made into
a stunt woman so how did you choose
stunt woman mostly a lack of
self-preservation
yeah I'm always been a bit of an
adrenaline junkie I like trying new and
outlandish hobbies I figured I have a
decently high pain tolerance I figured
it was something that I would be good at
but mostly I just thought from the
perspective of maybe a producer would
make for a very visually stunning show
mm-hmm so I applied mostly because I
thought it would help me get it they
picked me an end for about six weeks
they trained me with different coaches
at different teachers
I learned stunt driving I got lit on
fire I thought that was stuff it was a
lot of stuff so what was the selection
process like for that did you see that
they were casting and you were just like
I want to be on it so there was a
convention that was in this area
it was Metricon in Tampa
and they had a stand set up for MTV's
made and they were doing interviews for
anyone who wanted to do it and I signed
some papers I did my little mini
interview and that was it I got a I
forgot really about it got a call six
months later and they're like you're in
Wow oh that's pretty good yeah
definitely not as rigorous I think if
some auditions or screening yeah things
can go so I was very lucky and then very
not lucky when I realize just how much
what you tell yeah you're like yeah I'm
second-guessing myself here this was a
lot so um for the UH as you were saying
I noticed that you got to drive cars
like stunt driving yeah you got hit by a
car
I did it was only an hour though so it
wasn't that bad only 30 miles per hour
that's it
ah you jumped off of what 40-foot Tower
that was my height yeah that was the
highest that I jumped was 40 feet um my
normal kind of one that I jumped was 10
feet and that was kind of just in to be
a standard like mattress bag type thing
but 40 feet was like my graduating high
dive I suppose it was it was really fun
very very scary because they kept on
drilling into you like you don't want to
fall into the bag incorrectly
yeah well that's lots of confidence now
guys thank you I'm very I'm very eager
that's absolutely terrifying to bat and
you also got set on fire I did yes and
and that one isn't nearly as dangerous
as you think it is there are layers upon
layers upon layers of things that you
are wearing if you ever see a stunt
person in a movie oftentimes they're
very heavily clothed or the only thing
that's lit on fire is their outfit and
not any part of their actual body
because you've got like a fill or like
it's like a gel that you put on your
sorry mother size something
yeah and it's it's multiple layers that
are all flame retardant and then you've
got your main layer on top that's like
super thick but that's the layer that
burns away
so you're only supposed to be on fire
for like 30 seconds or laughing so I
actually kind of got a little bit of a
burn on my leg from that oh yeah time
moves so so slowly when you're on fire I
didn't realize sure it does five seconds
so all of that sounds absolutely
terrifying to me and I never do any of
that scream uh especially not the
jumping off of 40-foot Tower I'm
terrified of heights
now did you crap your pants at all
during any of this if I did you're not
revealing the camera doesn't matter fair
enough fair enough I I'm an adrenaline
junkie I love things like that I love
Heights I loved just the the action of
it so it was it was a lot of fun it was
worth it for sure so um now did you this
is a personal question you don't have to
answer did you get paid for this or was
that kind of like you got paid in
punches so because it was through MTV
most of it was they paid for my hotel
they before my plane ticket they made
for all of the things like my food and
my board and all of that
it wasn't until I ended up working at a
wild west on SH I went to Jean which is
where I learned about Nietzsche Dallas
um that I ended up actually getting a
job where I got paid for it and that was
a little bit more of I did fight scene
choreography I got you know thrown off
of a roof I I got to be a part of an
explosion which was pretty fun but most
of what I did was was production work
you know whether it's how to make blanks
for the guns cuz mild west I learned
yeah you do bullwhip which was really
fun as well um but you know it's a
little difficult to get health insurance
as a stunt woman so after that then you
segwayed into the alcohol realm so you
got a job at Total Wine which is where
you became a Cicerone I did I was there
I was there there Scotch expert there's
spirits specialists in general and
there's Cicerone
and I taught all of the beer and spirits
classes very so that was that was my
favorite thing to do really because I
mean what is better than picking 13 of
your favorite beers and teaching people
about it and you know helping people
have a really good time for lack of a
better term but yeah it was a lot of fun
but by the way I forgot to mention this
is delicious yeah so I'm having a hard
time deciding um
the strawberry is very prominent okay
and it's very um strawberry jam light so
I would say it's leaning more toward the
peanut butter jelly gotcha
but it's amazing so um okay very quickly
because we're running out of time and
like I said I have so many questions for
you um another thing that I was like
whoa what is this on your bio you were
an aerial Acrobat I mean technically I
need to get a job in an or anything but
when I was in college we put on a
production of A Midsummer Night's Dream
and they hired two directors one to
teach the Shakespeare and one who was an
artistic director who taught all of us
how to do aerial acrobatics and it'll
dock I'm comin I would rake my I did a
aerial Lehrer so it's like the the metal
okay more than I would do the aerial so
but I would rig my equipment in my
neighbor's tree oh I'm sure they were
standing by like oh my god then not yes
but I had gone so long without it
actually that was that was a perk of
Willard's good so finally I feel like an
adult so um did you have a background in
anything like that like gymnastics or
again it was just something you picked
up something I picked up I have a nasty
habit interesting being a serial hobby
dad learn my name
we had to call it well not just pre
people you can learn at any point in
life history would be an aerial Acrobat
okay
so um all right I have some bartending
questions for you since this is a
bartending I mean this is turn into the
Katie show so it's now Katie so I did
have one more quick question that I
almost forgot about unrelated to me and
do people ever recognize you from the
show no not at all good well because
yeah there were a lot of moments in made
that I would I really would rather
people not remember but I also when I
got my job at Willard's the first thing
that I did was get tattoo you can dye my
hair oh I've been dying my hair crazy
colors for the last two years every
couple of months so I don't know what
are we going to and then I just revealed
to everyone yeah and now you don't get
non-stop question thanks for that I
appreciate it I know I outed you on your
podcast and then I just outed you on
your made I have you know secret
identities at all anymore seriously why
would you do that
okay sorry what we do here a mix and
mingle so um how did you get into craft
beer did you always like it or did you
kind of segue like you you know we're
like a you know domestics and then you
know you're like this wasn't tasty
enough I want a craft beer I actually
I've always really appreciated craft
beer I've always had a lot of friends
who were into craft beer my now blue
mate is a home brewer so he was kind of
getting me into it a little bit when I
worked a total line obviously when
you're surrounded by so many different
things some of the four types of alcohol
different types of craft beers different
types of liquors you you find yourself
sampling quite a bit did you find
yourself sampling rum at all I actually
that's our magic word for the episode a

was like I know craft beer no that's and
I'm assess our own level one so um you
brought up your roommate brewing their
own beer have you ever tried home
brewing I kind of tried once I got the
Jim homebrew from a distance okay I'm
just not very good at anything that
requires like translation I'm interested
in math I'm not a good scientist yeah
I'm not a good mathematician either I
was a music major in college I can count
to four yes oblique and literally
started five you know five six seven
really bad that was a bad joke Andy so
sorry take a drink of that so do you
prefer draft bottle or candy beer I
prefer I prefer draft just because it's
always fresher you know it's it's always
got so one of the things about beer is
if any light can get to it while its
sword it oxidizes and can oftentimes
cause it to get skunky
or or dull and card 40 and it just
doesn't taste as good
so cams and kegs are the best way to
keep it from oxidizing and going bad
now no matter how dark the bottle is
unless you've literally got a bottle
painted black you're gonna get some
oxidation having oxidization but
regardless one of those signs but
regardless so whenever anything is on
draft not only is it kept constantly
chilled in in terms of when it's
transported and and brought into your
personal bedroom it's there's no
oxidation happening at all and so it
just will always taste fresher it will
always have a longer-lasting life it's
just it's it's better I think in my view
I am very good right here myself so what
is your go-to beer when you go out
honestly unless I'm going to a brewery
or a very you know prominent craft beer
tap house isn't anything different yeah
cuz nine times out of ten no matter
where you go you're gonna get your
standard domestics you're gonna get
maybe a Sam Adams seasonal you're gonna
get maybe if you're really you know
lucky like a Lagunitas or something but
if they have something that's just
unique like if they have something from
you to Rome which is a Canadian Belgium
brewery or if they and I love everything
by them unibrow if you wanna be as fun

so what's your go-to beer at home oh
that's that's tough right now in my
fridge I mean season has a little bit to
do with it I agree right now I've got
some Funky Buddha sweet potato casserole
oh thank my good one yeah I love that
one and I've got some dragons milk I
can't remember what the name of the jury
for Dragon song is it's really really
nice super thick Russian Imperial South
and ten percent and it's yellow it's so
tasty now what is your favorite type of
beer out of all of them oh okay so this
is probably seasonal too actually
so it's a hard toss-up for me because I
either like steppes mm-hmm or showers
hmm so I'm like on those are legs yeah
very different but Yunnan beer drinkers
out there they're very stout is a very
dark more heavy beer if you're familiar
with Guinness vision that um sour is
very tart very a whole bunch of
different idea
you got no like citrusy sours you got
your salty goes at types hours you've
got your vinegary kind of Flanders red
types hours and I just I love anything
that kind of makes you do things where
you get like that like where you're like
sucking on a lemon head exactly that's
my favorite so all right we're uh
cutting it close on time but I have so
many things all right let me pick out my
favorite question here okay
ah let's see you were gonna tap I had to
adjust my glasses for this your house
with 40 taps willard's
so what about what do you do when a
guest comes in and they don't know what
they want and they're like I want to
sample this this this this this this
this this this do you cut them off or I
love when people do that like Baskin
Robbins
what day do you do that to her Fridays
and Saturdays
honestly usually people are pretty good
about it oftentimes they'll get people
who will ask for a sample and then feel
really bad to ask me for a second mammal
I one of those people it actually makes
me feel good about like I feel better
offering you a sample when I know you're
not just like I want to sample 1 7 8 and
19 can I use all of this yeah but
usually if people don't know what they
want I'll ask them if they're feeling
light or dark if they want something
light are the healing happy are they
feeling sour are they feeling sweet you
can narrow down the board substantially
and kind of pick out a couple of things
yeah give them a sample of the three
things you've narrowed it down to you
and see if they find one that they like
and I will say this having been a beer
tender myself um if you kind of push a
certain beer on them like if you give
them a simp like three different ones
yeah they'll pick one of those usually
instead of them being like like you said
I don't know 1/7 819 ok then they're
just gonna keep doing it so if you kind
of steer them in the direction they're
more likely to helpful helpful tip tip
tip for you bartenders out there it is
yes oh so uh my last question for you is
one that I ask all my bar guests um so
have you ever had anything super awkward
or embarrassing happen while you were
working okay so I actually have a pretty
great story and parted my French for
what I'm about to say but it was about
the third week that I had been working
at will
so I had gotten to know a lot of the
regulars but not really intimately like
I wasn't friends with them mmm and one
of the women who I am now very good
friends with she's one of my favorite
regulars who comes in I guess she had a
little bit too much to drink
mm-hmm and was you know she wanted to
say a joke mm-hmm and and the joke was a
little bit of an elaborate joke and hit
her a new can ever remember her state of
inebriation she managed to take two
parts of the joke combine it into one
and in a moment of complete silence in
the bar she looked at me and went you're
a [ __ ] and then the look of horror on
her face look the [ __ ] on her face I
lost it I just like laughing cuz I
actually kind of was like I went down to
my diamonds on the floor cause everyone
heard it it was dead silence and she had
hand over her mouth she looked like she
was like gonna cry I almost she's like
I'm so sorry one of her friends was like
yelled at her and how you got it in oh
sorry Anne now she calls me a [ __ ]
laughing but yeah so that was really
funny and awkward and you know that now
now it's just it's a great story to tell
about when one of my patrons called me a
[ __ ] since we are so low on time thanks
to me and my excessive questioning of
you it's like an interrogation room in
here so you're experienced at TV you're
like no muscle so we have two more fairy
tales to make and let's go get them

okay so what is the next beer tail organ
do so the next one it's kind of the more
classic what people think of when they
hear beer tale so a beer tail or a
loaded beer is basically a beer as a
base with a shot of some kind of liquor
in it
okay so oftentimes you would get a blue
moon then he would put a shot of Grandma
a unit to kind of balance out that whole
like Orange - orange or he would do a
corona with a lemon rum in it or
something just just could you just a rum
jet Sara thank you once again our
sponsor code rum and a regular rum will
work in anything ever
I do they have a delicious mango rum
though oh and a key lime rum ooh
key lime Roma in a corona delicious I
bet that would be or any sort of
blackmail but what I'm gonna do today is
a little bit of a spin on that I'm going
to basically make a goes Auriga so a
margarita kind of made with beer and
some tequila so I'm gonna start and I
got myself a little shot of the camera a
tequila that I'm gonna use as candies
I'm not gonna do a full shot because
that's just crazy I don't know if y'all
can see this but uh this bottle is now
empty and then I'm gonna do some triple
sec as well
Fullmetal why not I mean they're basic
shows will sec yet and triple sec is
like 0 30 percent I'll go 60 I never
know we know so start drinking it
straight and I've known face I'm going
to do the sea quenched session by doctor
shut and it's got lime juice lime peel
black lines and sea salt so it's already
got kind of your your lime margarita
your very margarita life exactly it's
kind of mix that all together hmm and
then I'm normally a fan of the less
sweet to the better mm-hmm
but what I'm gonna do for you just in
case you want to try some of it
absolutely the most here a minute okay
just to give it a little hint of
sweetness that you don't get um the
triple sec okay cuz it might not be
sweet enough for ya okay I find out yeah
so a go Sarita and if it doesn't give
any sort of head or any sort of foam
taste good just add more tequila that's
my motto
alright there we go
and yeah with all of that liquor in it
it's not going to give you too much head
or phone yeah I'm gonna weighs it down
I'm taking a sip of it I was I'm
actually eager to see what you think
watch your face please yes
interesting it tastes like a margarita
perfect yeah good could you do a salted
rim on this
she's probably yeah I would probably do
like a yeah I would probably do like a
Himalayan pink sea salt rim okay with
getting a little fancy but we're a
classy joint with maybe a lime for
garnish hmm
because this has black limes and sea
salt create the rim made out of that
yeah black Mario our butt so all right
so we have one more drink to me and this
one katie tells me she's unsure of haha
sure first not as confident so this is
the kind of a uh a test like we're
throwing katie in the fire even though
she got set on fire at one point ten or
there I would say we're throwing her in
the fire with uh making this drink that
she's never made before
exactly so I'm anxious to see how it
comes out so one of my favorite things
to do and I kind of mentioned it before
is I enjoy creating different beer tales
that emulate certain things like
desserts I once made a tiramisu
um I once made a Bananas Foster kind of
beer tale um or making a beer tale that
emulates a cocktail specifically so like
making a Sazerac near tail with an
absinthe flavored cider um what I have
never tried to make before is a
chocolate old-fashioned beer tale so
that is what we are going to try to make
it I'm going to make one for both of us
so that we can try them both and you
guys can bear witness to my success or
my failure all right let's do it
let's do it so I'm exciting as my as my
my face I'm starting with the Kentucky
Bourbon Barrel ale so this is what's
going to this is what's going to emulate
here - perfect so yeah the Kentucky
Bourbon Barrel is what's going to
emulate that ugliness that you get from
the Bourbon mm-hmm in an old-fashioned
so I'm gonna throw a little bit into
each of our glasses okay give it a
little bit extra because the flavor of
the oak aging it's gonna be more subtle
mm-hmm then every other flavor okay pour
that chocolaty deliciousness my favorite
Chocolate Stout which is Sam Smith's
organic chocolate Vanek chocolate stuff
and it literally tastes like tootsie
rolls so I'm gonna put not as much in
there probably I would say that's two to
one that we've done so far okay because
the chocolate flavor is a noticeable
flavor now can our viewers buy these
beers at Willard's or a total wine or
you know so some of these beers we do
have on or have had on draft but I
actually bought all of this a total
while okay so yes you can get everything
that you see before you at total or
usually can anyway sometimes they might
be out okay and then for our last one to
give you a little into that citrus that
you get from like the orange peel and
the orange in an old fashioned I chose
the Lost Coast tangerine wheat okay I'm
going to do a substantial splash of that
one because it is the lighter profiled
so this is later if you're familiar with
an old fashioned cocktail this is kind
of replacing being muddled orange
exactly muddled orange and sweetness
you're getting more of a sweetness from

chocolate old-fashioned beer tales so
now is the time to try it weird this is
the most nervous I've been this entire
time if this tastes like crap I'm just

it's an interesting taste um and I don't
just like it doesn't taste like an
old-fashioned but you know it it tastes
good I I will give you that so again it
does not taste like an old-fashioned so
if you're really looking forward to a
beer tale tasting like an old fashioned
details but I'm go ahead and experiment
with what I did and zoom you can find
things like a different bourbon
barrel-aged beer or a different
chocolate stout or something a little
bit more pronounced with that orange
flavor maybe there's some increase in a
narrow cherry it's not bad it's not bad
I feel like each one is better on it
well it was a good try Katy thank you I
commend you for it
