In this video I'll share the process and recipe for teh italian mozza Sausage.
A fully cooked Sausage designed to taste like a pizza and it full of stringy yummy mozza.
Recipe
Salt 15g/kg
Pepper 3g/kg
Garlic 4.5g/kg
Chilli Flakes 2g/kg
Anise 0.5g/kg
Paprika 1.5g/kg
Oregano 1g/kg
Fennel 1g/kg
Sugar 3g/kg
Sodium Erythorbate 0.5g/kg
Cure #1 3g/kg
Binder 10g/kg
Water 100g/kg
Mozzarella 130g/kg
Tomato Paste 30g/kg
