The Best Pie in Football?! | Matchday Menus with Adam Richman

Matchday Menus takes us to some of the world’s coolest spots as food and football combine for a mouthwatering combination.

In the UK, where there’s football, there is ALWAYS pies. And in morecambe, they’d argue they do them better than anyone. Adam heads to the seaside to create his morecambe Matchday Menu ahead of their cup tie with Carlisle United, complete with the club’s award-winning pies, as well as local Fish and Chips and Saltmarsh Lamb.

i'm adam richmond and welcome to match

day menus

what is up copperfam it's adam richmond

coming to you from the northwest of

england

in beautiful morkum in fact i'm standing

here on the promenade

just outside morgan bay in addition to

being a wonderful seaside resort town

during the warm months

is also home to morecambe fc and tonight

morkum is doing battle with arch rival

carlisle

at home in the cup but we need to create

our mouth-watering morka

match day menu and right alongside this

bay

that means we have to have the local

delicacy

potted markham bay shrimp but that's not

all

we're gonna have unbelievable fish and

chips and a pie that has been voted

the best in football best in england and

even sold at harris so let us have a

true seafood diet

ah nice to finally meet you hello how

are you this is amazing i literally

mentioned to the people

that were working in the hotel in which

i'm staying they referred to you as mr

morkum

so may i please have fish and chips with

salt and plenty of vinegar

i think the best way to eat these is

outside and if you ever walk down to the

shore

i think you'd find them superb

look at that where there's some caramel

what are those seagulls just seagulls

tell you what they'll be after your fish

and chips

by the way i have to admit while we were

setting up this shot i ate a few of the

chips

every chippy in england please come to

markham and learn how to do this

correctly

the chips are crispy beautiful mmm you

can hear the crunch

but this is what you want when you're by

the seaside look at this fish

oh my god if i lived in morkum i'd be as

big as a house

i would eat this every darn day it's

like the perfect amount to fry

but what i love is you're in a seafood

community

you don't want to lose the taste of the

fish and i think that that's what's so

admirable

in a crispy batter as well a little bit

the batter is wonderful my friend is

from this area

and so she told me that if i tried

something delicious she told me the

right way

to express it my accent will be utter

crap but

that would dead go back that's okay

that's okay sound

so tell me a little bit about the match

tonight tonight we are playing who

welcome we're playing carl united which

isn't very much a derby game

should be a good game we've got a new

manager more coming this week so

that'll create a bit of interest at our

level you're nearer to the football

we term it as football you can touch

because

you can't see the players after the game

they are around the stadium they do go

into the restaurant or the bar so it's

much more personal

the badge itself has a shrimp on it now

the potted shrimp

is a delicacy that was created here can

you just take me through what exactly is

a potted shrimp for a potted chip novice

okay so the shrimps are caught on the

bay

there's only two full-time trawlermen

now

shrimping for them is that right yeah

they're boiled on the vessel

brought to shore picked and then you've

got the the small brown shrimp

the potty shrimp is set in butter and

eaten with

either toast warm or cold with just

wholemeal brown bread

oh wow that's delicious

it's almost like mini scampi there's

that richness from the garlic butter

maybe even a little bit of paprika in

there but

it has like a succulent to it even more

than regular shrimp

this is a world-renowned product

that here is just local fare and i think

that's what makes this so special

this is part of a market match day menu

and it's wonderful

nobody but i do mean this nobody does

just toast like the brits

i don't know why i'm gonna finish my

potted shrimp

take in a few more of the sights of this

beautiful city and head to the ground

and sample the absolute best pie in

football

[Applause]

malcolm's got the best players in the

world

we are at a football ground that holds

thousands

of supporters and every pie is made by

hand

why is literally three three four of us

making pies

markham has actually won best pie this

very year in 2019

to have the best of any given british

staple

is not easy to do what gives you the

competitive edge

i'd go down the pastry recipe has been

passed down from my face chef

her family's past been doing generations

her family used to own a bakery and they

used to make pies and that paste is

literally

i don't know decades and decades worth

of old me personally

i don't know the recipe for facebook is

that right

yeah there's only one person in here

that knows it i love that

so we have a decades-old pastry recipe

and

four people turning out thousands of

pies for thousands of spectators

and yet the quality is so consistent

that this

wonderful stadium they make the best

single pie in this beautiful country

all right so we're going to try one of

each correct yes all right

and they don't get gravy or they both

get crazy yeah you guys right good gravy

of course

you're up north

first football match pride

it's gonna be hot

oh was that good you know what's amazing

it still

feels kind of light

[Music]

phenomenal i get why this one won the

award from a culinary standpoint it's

got the most nuanced the most

but it's just the flavors are layered

[Music]

that was phenomenal the flavor on that

one that means the potato

wow that's the most popular one i don't

know what i wanted in my first meat pie

but that was it

i don't think i could praise this pastry

enough you can tell it's a secret

respite

see how it separates that's something

that a baker made so if i actually pull

it apart

you see the layers actually come apart

it's a proper pie crust

you have the best napkins in england too

because i really need one

all right unfortunately more of them are

one-nil down at the half

we have 45 minutes of play i have

essentially 22 and a half minutes of pie

the potted shrimp and morkem fish and

chips

we made sure we did that is there any

other flavor

that we are missing really really nice

salt marsh lamb just down the road at

grange over sands

i'd really suggest trying that out yeah

now then how are we doing how are you

doing sir yeah i'm all right thank you

what a pleasure to meet you

adam a pleasure to meet you we've got

the salt marsh lamb which

we're quite well known for because we've

been selling it for a long time

the buzz is that essentially it's

kind of pre-seasoned because they've

been you know

grazing on these salty grasses is that

true that's true yeah the french

are not more french at all except one

phrase and that's

praisely agnew which means pre-salted

lamb

that's as good as your french gets

different types of grasses that's the

main

difference between well we call it the

lowland lamb if you will that's said on

meadowgrass

right that's seagrass it's a delicate

flavor we like to put it it's like a

a sweet delicate flavor would you like

to follow us then adam we're going to

go downstairs we've got a piece of lamb

that we're gonna put in the oven

it's a bit cozy down here but uh it's

the best we can do

i love it it's normally three or four

down here working

it's pie country how many pies are you

turning out a day

a couple of thousand a day down here oh

my goodness gracious

these are just pork pies we do the steak

pies

sausage rolls and all sorts

this is sam this is our head chef down

here in the operation

and we've um cooked a piece of salt

marsh lamb for you to try

and you know looking forward to what you

think about it yeah how long have you

been carving meat and cooking meat

i can say for sure it's more than 20

years well i seasoned with salt and

pepper

and then seal it on the grill and quick

oven for 45 minutes

and then you rest it for about 25 25

minutes

so half the time that you've cooked it

you want to rest it

any spices or flavorings on it a bit of

roast milk as well

rosemary lamb's best friend by the way

crocodile dundee you were wrong

that's a knife yes

is it nice and pink oh

perfectly done chef beautiful beautiful

job on that one of the other elements

that i was dying to try here

and that samphire it is absolutely

delicious

very very healthy and perhaps the most

needed fiber

i have been looking for since i've been

living here in the northwest it's like a

thin green bean crushed with that sort

of fibrousness of asparagus

i absolutely love it yeah where is it

harvested well wiggle it out in the bay

morkan bay 150 square miles of salt

marsh

so we're very lucky on our doorstep look

at also the colors

let's have a taste look how beautiful

that is that's called temperature

control

you see a warm pink center is a little

bit of blood perfect sear on the outside

and you get that juice because you need

to rest it

come on man look at that

i mean i may as well have used a spoon

that was so soft this is the one that i

was looking for

sam fire and local salt marsh lamb

yay that's the combination i wanted

the whole trip local meat cooked well

with a handful of ingredients salt

pepper rosemary and oil sand fire just

done with a little bit of butter and a

little bit of

rosemary itself the more you respect the

ingredient respect the tradition

you end up with just a spectacular

product i can't recommend it enough

to everyone who is a foodie who's a food

explorer

come to markham see the mighty shrimps

play it is

an incredibly exciting experience the

football is fun the people are great the

pies you know are awesome

come to northwest england try the

amazing flavors of more convey shrimp
