Lentil Soup Recipe #shorts

1 small onion
2 celery stacks sliced thin
2 carrots sliced thin
1 sweet potato peeled and diced
1/2 tsp salt
1/4 tsp pepper
1 tbsp curry powder (optional)
2 dry cups lentil (any variety)
4 cups veggie stock
5 cups water
4 stalks of fresh oregano
5 ounces of spinach
Calabrian chili pepper
-To a large pot, add the olive oil and heat over medium high heat
-Add onion and cook for 1 minute, then add celery, carrots, sweet potato, , salt, pepper, and OPTIONAL curry powder. Stir to combine and cook for 2 minutes.
-Add lentil, stock, water and oregano
-Bring to a boil and then reduce to a simmer. Remove the foam as the lentil cooks. Once the lentils are tender, but not mushy, remove from heat, remove oregano stems and add spinach.
-Garnish with Calabrian chili pepper or grated cheese.
