1. In a large pot, heat 1-2 tablespoons olive oil on medium heat. Add all the vegetables except tomatoes and garlic. Sauté for 5-6 minutes then add garlic, tomatoes, and tomato paste.
2. Sauté for another 2-3 minutes and add 1 cup vegetable stock to deglaze the pan. Add lentils and remaining stock.
3. Add seasonings and bring to a simmer. Cover and cook for 30 minutes or until lentils are filling cooked through.
